Resep kue lumpur pake kentang (yg kemaren kubawa)
Bahan:
375 grm (1.5 cup) gula pasir
375 grm, (2.5 cup) tepung terigu
750 grm kentang, kukus dan haluskan (pake kentang
frozen aja, kukus 30 mins. kalo mau direbus mungkin gpp juga)
150 gr butter, lelehkan
3 telur utuh
1 kuning telur tambahan
750 ml santan --> 1 kaleng 400 ml santan + air / susu
sampai jadi 750 ml
3/4 sdt vanilli
3/4 sdt garam
150 gr kismis, untuk taburan --> rendam dikit air dulu
biar ntar ga gosong pas di oven
Cara membuat:
Kocok gula dan telur sampai putih dan mengembang (tidak perlu naik),
masukkan garam dan vanilli sambil terus dikocok.
Tuangi santan, aduk rata, masukkan kentang halus dan tepung terigu
secara bertahap sambil tetap diaduk rata.--> kalo bisa diayak
tepungnya, ngaduknya hati2 biar ga berbutir butir tepungnya, kalo
punya blender / food processor, diblender aja sekalian :D
Terakhir, tuang mentega leleh, aduk rata. --> aduknya harus sampe ga
keliatan menteganya misah
Panaskan cetakan kue lumpur, poles mentega, tuangi adonan hingga ¾
penuh, tutup, biarkan setengah matang taburi kismis, tutup lagi,
biarkan sampai matang. Angkat. Variasi taburan lain bisa menggunakan
parutan keju, irisan nangka, coklat mesis, dll.
-> pakai oven : taruh di cup/loyang, oven 200 derajat 20 menitan
Resep kue lumpur terigu aja
ingredients:
- 125 gr margarine --> 1/2 cup/ 8 tbsp butter
- 250 ml (1 cup) water
- 125 gr flour --> 1 cup
- 100 gr sugar --> 7 level tbsp / 1/2 cup
- 1/4 tsp salt
- 1/2 tsp vanilla powder
- 3 eggs
- 200 ml thick coconut milk
- raisins for topping.
Cooking instructions:
- bring to boil the butter and water, lower the heat.
- mix the flour into the batter until you get a non-sticky batter
- pour the sugar, salt, and vanilla, mix well. leave it to cool.
- mix the batter with eggs, one at the time
- add the coconut milk
- heat the pan, put some butter to the surface, pour the batter, close
the lid. Put some raisins for topping when it's half cooked, put back
the lid until its cooked, or
- heat the oven for 200 degree celcius, bake the batter in muffin
cases until they are all done.
