Bahan :
1/2 kg eggs (8 eggs)
1/2 kg sugar
1/2 kg flour
50 grm cocoa powder
Bahan cair :
1/2 kg dark chocolate
1/2 kg butter + oil : 250 gr butter + 250 gr oil
1. Prepare 4 brownies loaf (30x10x4) layered with parchment paper. Preheat the oven to maximum heat.
2. Melt chocolate & butter in the microwave, add the oil once they are all fully melted
3. Beat eggs and sugar until it's thick and white (use balloon whisk with maximum speed)
4. Sieve flour, cocoa powder into the mix, beat with minimum speed with flat beater attachment (or fold in manually).
5. Add (or fold in manually) the mixture of chocolate and butter+oil.
6. Divide into the loaves, bake them.
7. Immediately lower the heat once the loafes are in the oven to 180 degrees. Bake for 20 minutes with top and bottom heat, then 10 minutes only with top heat.
My substitution:
3/4 recipe in 33 x 23 rectangular pan:
6 eggs
320 gr sugar
320 gr flour
60 gr cocoa powder
375 gr dark chocolate
375 gr butter
Same process, bake at 180 degrees for about 30-40 minutes. Check with toothpicks every 10 minutes after 20 minutes bake time. It's done when the toothpick comes off clean.
