Classic cheesecake

Crust

1 pack San Francisco biscuits, crushed

113 grm butter unsalted, melted

1/4 sdt salt

Mixed them all, press them to the pan, make tall side crusts. Bake in the oven for a while.


Filling

5 packs cream cheese (200 grm) room temperature 

1 pack sour cream (120 grm)

4 eggs 

100 grm sugar 

With paddle attachment whisk in low speed cream cheese until smooth, add sugar and sour cream, then eggs one by one just until mixed.

Pour in the crusted pan.

Bake in 200 degrees oven for 40 minutes.

Edges will likely have slightly puffed and may have just begun to turn a light golden brown and the center should spring back to the touch but will still be Jello-jiggly. Don't over-bake or the texture will suffer, which means we all suffer.

Remove from oven and allow to cool on top rack of the oven for 10 minutes. Let cool to room temperature. Enjoy.

▢227 g salted butter softened

▢160 g light brown sugar packed

▢2 large eggs

▢410 g all-purpose flour

▢1 tsp baking soda

▢½ tsp baking powder

▢1 tsp sea salt

▢396 g chocolate chips (12 oz)


Instructions 

Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius). Line three baking sheets with parchment paper and set aside.

In a medium bowl mix flour, baking soda, baking powder and salt. Set aside.

Cream together butter and sugars until combined.

Beat in eggs and vanilla until light (about 1 minute).

Mix in the dry ingredients until combined.

Add chocolate chips and mix well.

Roll 2-3 Tablespoons (depending on how large you like your cookies) of dough at a time into balls and place them evenly spaced on your prepared cookie sheets.

Bake in preheated oven for approximately 8-10 minutes. Take them out when they are just barely starting to turn brown.

Let them sit on the baking pan for 5 minutes before removing to cooling rack.
