Azrius Pistachio Birthday Cake!



Azrius requested a pistachio cake for his third birthday! And after searching I've found this gem of a recipe that results in such moist, delicious pistachio cake that I've ever tasted!

Here's the original recipe: Italian pistachio cake

And here's my few alteration of the ingredients to make 2/3 of the recipe:

  • 4 egg yolk
  • 170 gr sugar -> 130 gr
  • 1-1/3 tbsp flour
  • 1-1/3 tsp baking powder
  • 1/3 tsp salt
  • 227 gr pistachio, ground with food processor. Leaving coarse pieces are fine too
  • vanilla extract 2 ml
  • 4 egg whites

Beat egg yolks with 85 grm sugar until it is thick and coloured pale yellow.
Add sifted flour,  baking powder,  salt using low speed mixer. Add the remaining 45 gr sugar in the end.
Fold the pistachios and vanilla. This takes lots of power, and it became some kind of thick paste for me.
Beat egg whites to stiff peak. Fold not so gently to the pistachio paste until it forms rather uniform batter.
Bake on 160 degrees preheated oven for 45 minutes.

Add whipped cream on top.
