Healthy, quick bread : Irish oatmeal soda bread

In search for a healthy bread for our morning breakfast everyday, preferably, eggless, sugarless, and containing oatmeal. Here's the bread I've made three times so far :



Based on Irish soda bread recipe with the most ratio of oatmeal vs flour combined with this

2 cups of oat flakes, ground
2 cups of all purpose flour (farina tipo 00) : I've substituted with 1 cup whole-meal flour + 1 cup all purpose flour with good result too
2 tsp of baking soda
1 tsp of salt
500 ml of naturally sweetened low fat yoghurt (I found the result is very dense with just these)+ low fat milk up to 2-1/2 cups, or
500 ml of plain low fat yoghurt + water up to 2 cups + 1/4 cup honey + 1/4 cup olive oil
I also like to add 50 grams of almond, blitzed in food processor for more crunches inside the bread.

Mix thoroughly all the dry ingredients, form a well in the center, add all the wet ingredient in the center.
Fold in the batter with wooden spoon just until everything's mixed through, careful not to overwork the dough.
Pour in the pan. Make some slashes in the center.
Bake in 200 degrees celcius oven for 25 - 35 mins.
Test with a wooden skewer if the center has been cooked thoroughly, turn over, and knock the bottom with a wooden spoon, if it sounds hollow then it's done.
